On a charming street corner in Williamsburg lies a neighborhood favorite: Cafe Colette. Inside this light, fresh space, co-owner and chef Erin Gerken is reinventing timeless appetizers and entrees.

One Colette staple is the charred octopus appetizer served with house-made chorizo, white beans, and Castelvetrano olives. Gerken and her sous chef Calixto Acevedo showed us how to make it.
