Egg Shop | The Dish

New Yorkers love nothing more than a great brunch, especially eggs. Now there's a place that serves eggs day and night. Let's check out Egg Shop in Nolita. Executive Chef Nick Korbee says it started with the idea to make a great egg sandwich and then evolved into all eggs all the time. He is serving up an inventive menu filled with the foodie favorite. For breakfast here you can make your own egg sandwich. For dinner, try Nick's favorite dish: Egg Shop Bap, his take on the classic Korean dish bi bim bap.

It begins with chopped garlic and ginger. Then comes the rice. Next Nick adds sesame oil and gluten-free soy sauce called tamari. While that's cooking, Nick does two other things: cracks an egg and cooks it sunny up (low and slow). Then he scrambles another egg and adds it to the grill. The egg gets mixed in with the rice.

Next, Nick gets started on the fried chicken, made from chicken that is brined for 24 hours with garlic and chili flakes then soaked for another 24 hours in a mix of buttermilk and other seasonings. Then it goes into the fryer. Some sesame seeds are added to the rice along with more tamari, sesame oil, and scallions.

The garnish is cucumber and radish. Then everything is ready to go. Nick throws it all into a bowl, rice first. The golden-brown chicken is tossed with sesame seeds, sesame oil, sweet chili paste, and scallion. Nick adds it to the bowl over the rice, along with the cucumbers, radish, pickled onion, cilantro, pickled carrots, and a bit of avocado.

Last, but not least, comes the egg. Nick tops it all off with more sweet chili paste, scallion, more cilantro, sesame oil, more tamari -- and the dish is complete.
