NEW YORK (FOX 5 NY) - Celebrity chef Todd English shares his recipe for 'Dun Dun Noodles with Peanut Sauce' and 'Poached Salmon.'
Dun Dun Noodles with Peanut Sauce -Yields 4 portions
Sesame Oil 1/4 cup
Rice Wine Vinegar
3 Tbls Jalapeño (no seeds) 1 ea.
Water - to thin the consistency
Chinese Wheat Noodles 10 oz.
Roasted Peanuts 1/4 cup
Scallion 1/4 cup
Combine in a blender Peanut Butter, Soy Sauce, Sesame Oil, Rice Wine Vinegar, Jalapeño and puree smooth (add water if needed)
Toss Cooked Chinese Noodles with Peanut Sauce
Garnish on plate with Roasted Peanuts, Chopped Scallions
Poached Salmon Yield 2 portions
Water 3 cup
White Wine 3 cups
Onion (cut into 1/4) half
Celery (cut 1" pieces) 1
Carrot (cut 1" pieces) 1
Lemon (peel zest+ juice) 1
Salt 1.5 TBLS
6 oz Salmon Fliet (no skin) 2
1 In a shallow pot add Water, Wine, Vegetables, Lemon and Salt and bring to a boil
2 Reduce to simmer = +/-185 degrees and place salmon into pot. Liquid should just cover fish.
3 Cover and cook salmon approximately 5 minutes, till opaque.
4 Remove Salmon and chill in refrigerator till ready to serve.
