Garlic fried chicken recipe

- GARLIC FRIED CHICKEN RECIPE    
Ingredients
1.       ½  chicken around 1.5 pounds
2.       4 pieces of chopped mini purple onion
3.       5 small pieces of garnished garlic
4.       ½ cup of chopped scallions
5.       1 ½ teaspoons of salt
6.       ¼ teaspoon of Chinese five spice powder
7.       1 cup white vinegar and 1 cup red vinegar
8.       1 cup maltose
9.       ½ cup dark soy sauce and ½ cup thin soy sauce
10.   1 cup Maggi seasoning (royal soy sauce)
11.   ¼ teaspoon pure sesame oil
12.   ¼ teaspoon white pepper
13.   ¼ teaspoon chicken flavored broth mix
14.   ¼ teaspoon cane sugar

Instructions
Prepare the chicken
1.       Combine salt and Chinese five spice, mixed well
2.       Put the salt & spice by the side of the chicken
3.       Mix white vinegar, red vinegar, and maltose together, and brush the mix on the chicken’s skin.
4.       Hang the chicken for about 5-6 hours to wait until the skin dries up
5.       Fry the chicken with vegetable oil at the temperature around 350 degree Fahrenheit for about 10 to 15 minutes until the color turns into golden brown.
6.       Chop the chicken into small pieces and wait to add the sauces.
Prepare the house special sauce
1.       Pour 1 teaspoon of vegetable oil into the saucepan and use medium fire, then put in the chopped purple onion and garnished garlic until they turn their colors into golden brown
2.       Mix all the ingredients: sugar, dark and thin soy sauce, Maggi seasoning, pure sesame oil, white pepper chicken bases
3.       Pour all the mixed ingredients on the saucepan to heat them up
4.       Pour the sauce and scallion on the top of chicken
